MMO’s Golden Cream of Mushroom Soup uses one pound equivalent of carefully and freshly dehydrated organic oyster mushrooms. Unlike our many bean soup mixes which require only water to prepare, this amazing mushroom soup requires the addition of milk, sour cream, and soy sauce, as indicated in the instructions. (Vegans can use non-dairy alternatives for these dairy items to enjoy a vegan version). The entire preparation/cookig process for this soup is about 45 minutes. Each package makes 5-6 delicious one cup servings. We recommend using a low sodium soy sauce if you wish to keep the sodium level down. (Note that gluten-free soy sauce is also available in stores). We suggest chopping the mushrooms into smaller pieces before re-hydrating. These dehydrated mushrooms are intended to be re-hydrated and cooked before eating. A little about oyster mushrooms: The oyster mushrooms used in our mushroom soup contain significant levels of zinc, iron, potassium, calcium, phosphorus, vitamin C, folic acid, niacin, and vitamins B-1 and B-2. Consuming oyster mushrooms as part of a healthy diet contributes to recommended nutritional requirements. Oyster mushrooms and other types of fungi are the only sources of ergothioneine, which functions as an antioxidant and lowers systemic inflammation. Oyster mushrooms are one of the best mushroom sources, according to the University of Pennsylvania. Research published in the November 2010 issue of the “Journal of Medicinal Food” concluded that ergothioneine may prevent the buildup of plaque in the arteries that leads to cardiovascular disease.
